Cauliflower Rice

Ingredients
1 head of cauliflower
1-2 tsp grapeseed oil or olive oil
1 tsp herb/spice of your choice

Directions
Grab a regular cheese grater and grate the raw cauliflower into small, rice-sized pieces, or use a food processor to pulse the cauliflower into rice-sized pieces. Put oil and herb/spice—such as Mrs. Dash Garlic & Herb—in with cauliflower and integrate well. Brown in non-stick skillet; could take as long as 10 to 15 minutes to get to a nice brown stage. Viola! Easy, easy, easy, and yummy. Makes 1 serving.

Popcorn Cauliflower

Ingredients
1 head of cauliflower
3 tbsp olive oil
2 tbsp Mrs. Dash Table Blend

Directions
Preheat oven to 450°F. Cut out and discard cauliflower core and thick stems. Trim remaining cauliflower into florets the size of popcorn. Toss thoroughly in a bowl with olive oil and seasoning. Spread cauliflower on a sheet pan and roast for approximately 60 minutes, or until nicely browned; turn three or four times during roasting. The browner the florets, the sweeter they will taste. Serve immediately. Makes several servings.

Jicama “Fries”

Ingredients
2 jicama, peeled and sliced into thin strips
1 tbsp olive oil
1 tbsp paprika
1 tsp onion powder
½ tsp sea salt
¼ tsp chili powder or less

Directions
In a large bowl, toss all ingredients together until fries are well coated. Set out on a serving tray and enjoy!

Variation
Cut jicama into french fries and microwave for 3 minutes. Blot with paper towel to remove excess moisture. Put jicama in a large Ziploc bag and add 1 tbsp your choice of oil, salt, and pepper, then seal and shake until well coated. Bake at 400°F for 30-45 minutes, turning half way through. Makes 1 serving.
