Southwest Meatballs
Ingredients
1½ lbs lean ground turkey, buffalo, or beef
1 pkg IP Southwest Cheese Curls, crushed
2 eggs
2 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
1 tsp fresh ground pepper
1 tsp dried oregano
1 tsp dried basil
Directions
Preheat oven to 375°F. Mix all ingredients in a bowl. Shape into golf ball sized meatballs. Spray baking sheet with non-stick spray and place meatballs equal widths apart. Bake about 18 to 20 minutes, or until cooked through.

Tuna or Chicken Wrap
Directions
Mix canned tuna or chicken—packed in water, not oil—with Walden Farms Honey Dijon dressing and/or Amazing Mayo, finely chopped celery, green, red, or yellow peppers, finely chopped dill pickles, onions, (any or all of these veggies, do what you like). Add Mrs. Dash spices, such as Garlic & Herb or Onion & Herb, or whatever spices you like – just be creative! Place mixture in a large romaine lettuce leaf or two and eat like a wrap.

Teriyaki Chicken
Ingredients
4 boneless skinless chicken breasts
1 med garlic clove, minced or 1 tbsp garlic, minced and to taste
½ tsp dried ginger
½ cup low-sodium soy sauce
¼ cup chives
¼ cup water
Directions
Preheat oven to 350°F. Place chicken in an 8×8 pan. Combine ingredients and pour over chicken; marinate 1 hour. Put chicken in oven for 10 to 15 minutes and then cook for an additional 20 minutes, basting frequently.

BBQ Chicken
Ingredients
6 boneless skinless chicken breasts
2 pkts Splenda or Stevia
3 tbsp Dijon or Creole mustard
1 tsp olive or grapeseed Oil
¼ tsp poultry seasoning
½ tsp Louisiana brand hot sauce
¼ tsp sea salt
Directions
Place all of the spice ingredients into a Ziploc bag and mix with your hands by massaging the outside of the bag. Add your chicken and massage the spice mix into and all over the chicken breasts and let sit in the bag. Fire up the BBQ and get it good and hot so that the chicken will be seared when it is placed on the grill. Sear the first side; when you turn it to sear the second side, cut your heat down and cook slowly until just done – no pink. This works in the oven too, and the chicken will be tender and juicy.

Chicken Veggie Dish
Ingredients
3 8-oz boneless skinless chicken breasts
3 cups broccoli florets
3 cups yellow zucchini, sliced
2 cups low-sodium chicken broth
2 tbsp olive oil
Sea salt and fresh ground pepper to taste
Directions
Sprinkle chicken with salt and pepper. Heat oil in large skillet and brown chicken on both sides. Add broth, cover, and cook 15 to 20 minutes, or until cooked through. Add veggies and sprinkle with salt and pepper. Cook 5 to 6 more minutes until veggies are tender. Yields 3 servings protein and 3 servings (2 cups each) vegetables.
